Abstract
Ancestral knowledge related to food is being lost at an accelerated rate due to the influence of a series of factors, including the supply of processed foods and their dissemination through the media, low-cost products with little nutritional value such as sugary drinks (soft drinks, tea, isotonic drinks), influencing the short- and long-term suffering of chronic non-communicable diseases (NCDs)
